Extracts burn off quickly, because its alcohol and flavoring mixed in them. When you make your lollipops, try to use essential oils, not extracts. The sugar sets up very quickly, and it may be difficult to do a lot at one time.Īll that’s really in lollipops is sugar, corn syrup, coloring, and flavoring. Make sure to not make too many batches at once. Remember your working with hot sugar, so be very careful! Keep oven mitts with you, and cautiously pour them into the molds. It’ll make the lollipops easier to remove. If your working with metal molds, make sure you have your sheet pan ready with a silicone mat, and that your molds are sprayed lightly with cooking spray. If you don’t have a copper pot, then use a thick, bottomed stainless steel pot. I make my lollipops in a copper pot with a pouring spout, as it heats up quickly, and its easier to pour into the molds. Buy a nice, study, stainless steel with a good clip, or even ones that have a clip on LCD with a probe. They usually are the ones that crack, and break easily. Don’t get the ones at the grocery store, where its a cheap, glass, candy thermometer. If your not familiar with candy making, I highly recommend a candy thermometer. Give it a try! Its not as complicated as it looks, and its fun to do with children, as long as there is adult supervision, of course. We poured the sugar mixture into the molds, and then popped them into the fridge to set up faster. Watching cautiously, we monitored the temperature on the candy thermometer, and when it was reaching the temperature of 310 Fahrenheit, we turned off the stove and add the color and flavoring last, and mixed well. We poured all our ingredients for the lollipops into a copper pot with a spout, aside from the coloring and flavoring. We lined all the molds onto the sheet pan, attaching the lollipop sticks into the opening at the bottom of the mold. We then, lightly sprayed each metal mold with cooking spray, to make sure that the sugar would release easily. Excited, we planned a day where we would dedicate our time making lollipops, and boy! Was it fun! We lined a sheet pan with a silicone baking mat. My partner during our class on chocolate making was digging through the cupboards to find chocolate molds, but then stumbled upon a baggie full of metal, lollipop molds, which included a recipe for lollipops. When I was in pastry school, I actual came upon the lollipop molds by accident. Its basically hot, poured sugar that becomes formed into shapes by either a metal mold, or a durable, heat-resistant, plastic mold.
